A delicious and easy-to-make Taco Rice Bowl featuring turkey bacon and chicken ham.

Ingredients

  • 1 cup rice
  • 1/2 pound turkey bacon
  • 1/2 pound chicken ham
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup salsa
  • 1 cup shredded cheese
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the rice according to package instructions.
  2. In a large skillet, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same skillet, add onion, bell pepper, and garlic, and sauté until soft.
  4. Add the chicken ham and seasonings to the skillet, and cook until heated through.
  5. Stir in the cooked rice and salsa, mixing until combined.
  6. Top with shredded cheese and allow to melt.
  7. Serve garnished with fresh cilantro and crumbled turkey bacon.

Notes

  • Substitute chicken for turkey bacon if preferred.
  • Add more veggies like corn or black beans for extra nutrition.
