Roasted Potato Salad Recipe

A delicious roasted potato salad with a twist of turkey bacon that makes for a perfect side dish.

  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half.
  3. In a bowl, mix the olive oil, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper.
  4. Toss the potatoes in the mixture until well coated.
  5. Spread the potatoes on a baking sheet and roast for 25-30 minutes or until golden brown.
  6. While the potatoes are roasting, cook the turkey bacon until crispy, then crumble it.
  7. Once the potatoes are done, let them cool slightly before adding the crumbled bacon and chopped parsley.
  8. Serve warm or at room temperature.
