  • 3 medium beets
  • 4 slices turkey bacon
  • 2 cups mixed greens
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wrap each beet in aluminum foil and roast for about 45-60 minutes, until tender.
  3. In a pan, cook the turkey bacon until crispy, then chop it into pieces.
  4. Once the beets are cool, peel and slice them.
  5. In a large bowl, combine the mixed greens, sliced beets, turkey bacon, feta cheese, and walnuts.
  6. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper.
  7. Drizzle the dressing over the salad and toss gently to combine.
  8. Serve immediately.
