Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, carrots, and celery and sauté until softened.
  3. Add garlic and cumin, cooking for an additional minute.
  4. Stir in the lentils and broth, bringing to a boil.
  5. Reduce heat and simmer until lentils are tender, about 20-25 minutes.
