  • 1 cup saltfish, soaked and flaked
  • 1 cup all-purpose flour
  • 1/2 cup water
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 green onions, sliced
  • 1 Scotch bonnet pepper, finely chopped
  • 1/2 tsp baking powder
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 2 cups oil, for frying

Instructions

  1. In a bowl, mix the flour, baking powder, salt, and black pepper.
  2. Add water gradually and stir until a smooth batter forms.
  3. Fold in the flaked saltfish, onion, bell pepper, green onions, and Scotch bonnet pepper.
  4. Heat oil in a frying pan over medium heat.
  5. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 4-5 minutes per side.
  6. Remove fritters and let them drain on paper towels.
  7. Serve hot with your choice of sauce.

Notes

  • For a milder flavor, reduce the amount of Scotch bonnet pepper.
