Instructions

  1. In a bowl, whisk together coconut milk, chia seeds, honey (or maple syrup), vanilla extract, and sea salt.
  2. Let the mixture sit for about 10 minutes, whisking occasionally to prevent clumping.
  3. After 10 minutes, stir again and then cover the bowl with plastic wrap.
  4. Refrigerate for at least 4 hours or overnight for the best texture.
  5. Before serving, stir the pudding and adjust sweetness if desired.
