  • 4 large bell peppers
  • 1 pound ground turkey
  • 6 slices turkey bacon
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded low-fat cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy, then chop.
  3. In a large bowl, combine ground turkey, chopped turkey bacon, quinoa, diced tomatoes, and spices.
  4. Stuff the bell peppers with the mixture and place them in a baking dish.
  5. Top each pepper with shredded cheese.
  6. Bake for 25-30 minutes until the peppers are tender.
