  • 4 bell peppers
  • 1 cup cooked quinoa
  • 1 cup cooked chicken, shredded
  • 1/2 cup turkey bacon, chopped
  • 1 cup diced tomatoes
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup shredded cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the quinoa, chicken, turkey bacon, diced tomatoes, garlic powder, onion powder, and Italian seasoning.
  4. Stuff the mixture into the bell peppers.
  5. Place the stuffed peppers in a baking dish and sprinkle cheese on top.
  6. Bake in the preheated oven for 25-30 minutes until the peppers are tender.

Notes

  • You can substitute quinoa with rice if preferred.
