Crockpot Chicken Tortilla Soup

A delicious and comforting Crockpot chicken tortilla soup perfect for any occasion.

Ingredients

  • 1 pound boneless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 4 cups chicken broth
  • 1 lime, juiced
  • Salt and pepper to taste
  • Tortilla strips for serving
  • Avocado for garnish

Instructions

  1. Place the chicken breasts in the bottom of the Crockpot.
  2. Add the black beans, corn, diced tomatoes, onion, garlic, chili powder, cumin, and chicken broth.
  3. Stir to combine and season with salt and pepper.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. Before serving, shred the chicken with two forks and stir in lime juice.
  6. Serve hot, topped with tortilla strips and avocado.
