- 1 tablespoon olive oil
- 1 pound skinless, boneless chicken breasts
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
- In a large pot, heat olive oil over medium heat. Add chicken and cook until browned on both sides. Remove and set aside.
- In the same pot, add onion and garlic, sauté until soft.
- Add chicken broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil.
- Return chicken to the pot, add lasagna noodles, and simmer until noodles are tender.
- Stir in ricotta cheese and heavy cream until well combined.
- Top with mozzarella and Parmesan cheeses. Cover until melted.
- Garnish with fresh basil before serving.
Notes
- For a thicker soup, reduce the amount of broth.
