  • 4 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Remove the bacon and set aside. In the same pot, add onions and garlic, cooking until translucent.
  3. Stir in the mushrooms and cook until they are softened.
  4. Pour in the chicken broth and bring to a simmer. Cook for 10 minutes.
  5. Blend the soup until smooth, then return to the pot.
  6. Add the heavy cream, cooked turkey bacon, salt, and pepper, stirring well.
  7. Cook for another 5 minutes before serving.
