  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the garlic and spices, cooking for another minute until fragrant.
  3. Add the cherry tomatoes and cook until they begin to soften.
