BAKED FETA PASTA

Baked Feta Pasta is a simple yet indulgent dish that transforms creamy feta and tomatoes into a delightful meal perfect for weeknights.

  • 8 ounces pasta of your choice
  • 1 block (8 ounces) feta cheese
  • 2 cups cherry tomatoes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, olive oil, garlic, red pepper flakes, salt, and pepper. Mix well.
  3. Place the block of feta cheese in the center of the dish, surrounded by the tomato mixture.
  4. Bake for about 30 minutes or until the tomatoes are blistered and the feta is golden.
  5. While the feta and tomatoes are baking, cook the pasta according to package instructions.
  6. Once baked, remove from oven and mash the feta with a fork, mixing it with the tomatoes.
  7. Add the drained pasta to the baking dish and toss to combine.
  8. Serve with fresh basil on top.

Notes

  • For extra flavor, you can add olives or capers to the baking dish.
  • Feel free to use whole wheat or gluten-free pasta if preferred.
