Veggie Pot Pie Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 3 cups mixed vegetables (carrots, peas, corn)
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1 cup biscuit dough, cut into pieces

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic; sauté until soft.
  3. Stir in mixed vegetables and cook for 5 minutes.
  4. Add vegetable broth, thyme, and rosemary; bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Stir in heavy cream, salt, and pepper.
  7. Add biscuit dough pieces and cook until fluffy and cooked through.
