  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup corn (fresh or frozen)
  • 1/4 cup cilantro, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and bell pepper, and sauté until softened.
  3. Stir in garlic, cumin, and chili powder; cook for 1 minute.
  4. Add lentils, vegetable broth, diced tomatoes, and corn.
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.
  6. Add salt, black pepper, and chopped cilantro before serving.
