Vegan Zucchini Rollatini

Ingredients

  • 3 medium zucchinis
  • 1 cup ricotta cheese
  • 1/2 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups marinara sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix the ricotta cheese, nutritional yeast, garlic, salt, and pepper until combined.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Place a spoonful of the ricotta mixture onto each zucchini strip and roll it up tightly.
  6. Arrange the zucchini rolls seam side down in the baking dish.
  7. Pour the remaining marinara sauce over the zucchini rolls and drizzle with olive oil.
  8. Bake in the preheated oven for 25-30 minutes, until heated through and golden.

Notes

  • For added flavor, sprinkle some vegan cheese on top before baking.
  • These rollatini can also be made ahead of time and stored in the fridge before baking.
