Vegan Zucchini Rollatini

Ingredients

  • 4 medium zucchinis
  • 1 cup ricotta cheese (vegan)
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix the ricotta cheese, garlic powder, and dried basil.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Place a spoonful of the ricotta mixture on each zucchini slice and roll it up.
  6. Arrange the rolls in the baking dish, seam-side down.
  7. Top with remaining marinara sauce.
  8. Bake for 25-30 minutes until heated through.

Notes

  • For extra flavor, add nutritional yeast to the ricotta mixture.
