  • 2 pounds bone-in short ribs
  • 2 cups red wine
  • 1 cup beef broth
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Season the short ribs with salt and pepper.
  3. In a large oven-safe pot, sear the ribs until browned on all sides. Remove and set aside.
  4. Add the onion, carrots, and celery to the pot and sauté until softened.
  5. Stir in the garlic and cook for an additional minute.
  6. Deglaze the pot with red wine, scraping up any browned bits.
  7. Add beef broth, thyme, and bay leaf, then return the short ribs to the pot.
  8. Bring to a simmer, then cover and transfer to the oven.
  9. Braise for 2-3 hours until the ribs are tender.

Notes

  • For extra flavor, marinate the ribs in wine overnight.
  • Serve with mashed potatoes or crusty bread to soak up the sauce.
