  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large ovenproof pot, heat olive oil over medium-high heat. Sear the short ribs until browned on all sides.
  3. Remove the ribs and set aside. In the same pot, add onion, garlic, carrots, and celery. Sauté until softened.
  4. Stir in tomato paste, thyme, salt, and pepper. Pour in wine and broth, then return the short ribs to the pot.
  5. Cover and transfer to the oven. Cook for about 3 hours until the ribs are tender.
  6. Remove from the oven and let rest for 10 minutes before serving.

Notes

  • For extra flavor, marinate the short ribs overnight in the wine and spices before cooking.
  • Serve with mashed potatoes or crusty bread to soak up the sauce.
