- 4 pounds beef short ribs
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat the oven to 300°F (150°C).
- In a large ovenproof pot, heat olive oil over medium-high heat. Sear the short ribs until browned on all sides.
- Remove the ribs and set aside. In the same pot, add onion, garlic, carrots, and celery. Sauté until softened.
- Stir in tomato paste, thyme, salt, and pepper. Pour in wine and broth, then return the short ribs to the pot.
- Cover and transfer to the oven. Cook for about 3 hours until the ribs are tender.
- Remove from the oven and let rest for 10 minutes before serving.
Notes
- For extra flavor, marinate the short ribs overnight in the wine and spices before cooking.
