  • 2 large cucumbers
  • 1 cup cherry tomatoes
  • 1/4 red onion
  • 1/4 cup fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Spiralize the cucumbers and place them in a large bowl.
  2. Halve the cherry tomatoes and add them to the bowl.
  3. Finely chop the red onion and parsley, then add to the mixture.
  4. In a separate bowl, whisk together the olive oil, apple cider vinegar, salt, and black pepper.
  5. Pour the dressing over the cucumber salad and toss until well combined.
  6. Serve immediately or refrigerate for 30 minutes to enhance the flavors.
