- 1 pound chicken breast, diced
- 2 tablespoons red curry paste
- 1 can coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 lime, juiced
- 1/2 cup fresh basil, chopped
- 1 red bell pepper, sliced
- In a large skillet, heat some oil over medium heat.
- Add the diced chicken and cook until browned.
- Stir in the red curry paste and cook for 1 minute.
- Pour in the coconut milk, fish sauce, and brown sugar, stirring until combined.
