A delicious and spicy alternative to fast food, made with tender chicken and flavorful Thai spices.

  • 1 pound chicken breast, diced
  • 2 tablespoons red curry paste
  • 1 can coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 lime, juiced
  • 1/2 cup fresh basil, chopped
  • 1 red bell pepper, sliced

Instructions

  1. In a large skillet, heat some oil over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the red curry paste and cook for 1 minute.
  4. Pour in the coconut milk, fish sauce, and brown sugar, stirring until combined.
  5. Add the lime juice and simmer for 20 minutes, or until the chicken is fully cooked.
  6. Stir in the basil and red bell pepper just before serving.

Notes

  • Adjust the spiciness by adding more or less curry paste.
  • Can be served over rice or with noodles.
