Ingredients

  • 1 pound ground beef
  • 3 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 2 teaspoons sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon sweetener (such as erythritol)
  • 1 cucumber, sliced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame seeds

Instructions

  1. In a skillet over medium heat, cook the ground beef until fully browned.
  2. Add the garlic, ginger, soy sauce, gochujang, sesame oil, and sweetener to the beef. Stir well and cook for another 5 minutes.
  3. In a separate bowl, mix the cucumber slices with rice vinegar and sesame seeds.
  4. Serve the spicy ground beef over a bed of the cucumber salad.

Notes

  • Adjust the level of spiciness by adding more or less gochujang.
  • For a cooler salad, chill the cucumbers beforehand.
