  • 1 cup warm water
  • 1 tablespoon baking soda
  • 1 egg (for egg wash)

Instructions

  1. Combine sourdough starter, flour, salt, sugar, and warm water in a large bowl. Mix until a dough forms.
  2. Knead the dough for about 10 minutes until smooth.
  3. Let the dough rise in a warm place for 1-2 hours or until doubled in size.
  4. Punch down the dough and divide it into 8 equal pieces.
  5. Shape each piece into a bagel form.
  6. Bring a large pot of water to a boil and add baking soda.
  7. Boil each bagel for 1-2 minutes on each side.
  8. Place the bagels on a baking sheet, brush with egg wash, and sprinkle with sesame seeds if desired.
  9. Bake at 425°F (220°C) for 20-25 minutes until golden brown.

Notes

  • For a richer flavor, let the bagels proof overnight in the refrigerator.
