  • 1 large cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine cooked rice, cucumber, cherry tomatoes, red onion, and cilantro.
  2. In a separate small bowl, whisk together olive oil, rice vinegar, soy sauce, sesame oil, salt, and pepper.
