  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large pot, heat olive oil over medium-high heat.
  3. Season the beef roast with salt and pepper, then sear it in the pot until browned on all sides.
  4. Add the onion, garlic, carrots, and celery to the pot and sauté for a few minutes.
  5. Pour in the beef broth and Worcestershire sauce. Add the thyme and rosemary.
  6. Cover the pot and transfer it to the oven. Braise for 3-4 hours until the meat is tender.
  7. Remove the beef from the pot and let it rest before slicing.

Notes

  • For extra flavor, consider adding red wine to the broth.
