- 3 pounds beef chuck roast
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 onion chopped
- 4 cloves garlic minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons Worcestershire sauce
- 4 carrots chopped
- 3 stalks celery chopped
- 2 sprigs fresh thyme
- 1 bay leaf
- Preheat the oven to 325°F (165°C).
- Season the beef with salt and pepper.
- In a large pot, heat oil over medium-high heat and brown the beef on all sides.
- Add the onion and garlic, sauté until softened.
- Pour in the beef broth, red wine, and Worcestershire sauce.
- Add the carrots, celery, thyme, and bay leaf to the pot.
- Cover and transfer the pot to the oven.
- Braise for 3-4 hours, or until the meat is tender.
- Remove the bay leaf and thyme before serving.
