Slow-Braised Beef Roast

A delicious slow-braised beef roast that is perfect for a family dinner.

  • 3 pounds beef chuck roast
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons Worcestershire sauce
  • 4 carrots chopped
  • 3 stalks celery chopped
  • 2 sprigs fresh thyme
  • 1 bay leaf

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Season the beef with salt and pepper.
  3. In a large pot, heat oil over medium-high heat and brown the beef on all sides.
  4. Add the onion and garlic, sauté until softened.
  5. Pour in the beef broth, red wine, and Worcestershire sauce.
  6. Add the carrots, celery, thyme, and bay leaf to the pot.
  7. Cover and transfer the pot to the oven.
  8. Braise for 3-4 hours, or until the meat is tender.
  9. Remove the bay leaf and thyme before serving.

Notes

  • Let the beef roast rest for 10-15 minutes before slicing.
  • Serve with mashed potatoes or crusty bread.
