  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large Dutch oven, heat the vegetable oil over medium-high heat.
  3. Season the beef chuck roast with salt and pepper, then sear it on all sides until browned.
  4. Add the chopped onion and minced garlic, cooking until softened.
  5. Pour in the beef broth and Worcestershire sauce, and add the bay leaves and thyme.
  6. Cover and transfer the pot to the oven. Braise for about 3 hours until the meat is fork-tender.
  7. Remove from the oven, discard bay leaves, and let it rest for 10 minutes before slicing.
