Slow Cooker Korean Beef Noodles

A delicious and comforting dish featuring tender beef and noodles cooked to perfection in a slow cooker.

Ingredients

  • 2 pounds beef chuck roast
  • 4 cups beef broth
  • 1 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 8 ounces rice noodles
  • 2 cups sliced vegetables (carrots, bell peppers, etc.)
  • 2 green onions, chopped

Instructions

  1. In a slow cooker, combine beef, broth, soy sauce, brown sugar, sesame oil, garlic, and ginger.
  2. Cook on low for 8 hours or until beef is tender.
  3. Remove beef, shred it, and return to the slow cooker.
  4. Add rice noodles and vegetables, stirring to combine.
  5. Cook on high for an additional 30 minutes, or until noodles are tender.
  6. Serve hot, garnished with green onions.

Notes

  • For a thicker sauce, remove some liquid before adding noodles.
  • Feel free to customize the vegetables based on your preference.
