Slow Cooker Creamy Tuscan Chicken Orzo

  • 1 pound chicken breast
  • 1 cup orzo pasta
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes
  • 1 cup spinach
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add chicken broth, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper.
  3. Cook on low for 6 hours or high for 3 hours.
  4. Remove chicken, shred it, and return it to the slow cooker.
  5. Add orzo and heavy cream, and stir well.
  6. Cook for an additional 30 minutes on high until orzo is tender.
  7. Stir in spinach before serving.

Notes

  • For extra creaminess, add more heavy cream at the end.
