Sick Day Italian Penicillin Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 1 cup pasta (small shape)
  • 2 cups cooked chicken, shredded
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add carrots and celery, cooking until softened.
  4. Pour in chicken broth and add diced tomatoes.
  5. Stir in oregano, basil, and black pepper.
  6. Bring to a boil and then reduce to a simmer.
  7. Add pasta and cook until al dente.
  8. Stir in cooked chicken and parsley before serving.

Notes
