  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 cup apple cider
  • 2 sprigs of fresh rosemary
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Season the chicken thighs with salt and pepper, and brown them in the skillet for about 5 minutes on each side.
  4. Remove the chicken and set aside. In the same skillet, add garlic and sauté until fragrant.
  5. Add apple cider, rosemary, and Dijon mustard to the skillet and stir to combine.
  6. Return the chicken to the skillet and spoon some of the sauce over the top.
  7. Transfer the skillet to the oven and roast for 25-30 minutes, or until the chicken is cooked through.
