  • 1 tablespoon olive oil

  • 1/2 teaspoon black pepper
  • 4 slices turkey bacon

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Chop the vegetables and place them in a large bowl.
  3. Add olive oil, salt, and pepper to the bowl and toss until the vegetables are well coated.
  4. Spread the vegetables on a baking sheet in a single layer.
  5. Bake for 20-25 minutes, stirring halfway through.
  6. In the last 5 minutes of roasting, add the turkey bacon on top.
  7. Remove from the oven, serve hot.
