A delightful recipe for roasted carrots enhanced with turkey bacon and fresh herbs.

  • 4 cups carrots, peeled and cut into sticks
  • 6 slices turkey bacon, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine carrots, turkey bacon, olive oil, thyme, garlic powder, salt, and pepper.
  3. Toss to coat the carrots evenly with the mixture.
  4. Spread the carrot mixture onto a baking sheet in a single layer.
  5. Roast in the preheated oven for 25-30 minutes or until carrots are tender and bacon is crispy.
  6. Remove from oven and serve warm.

Notes

  • For a sweeter flavor, add a drizzle of honey before serving.
  • Fresh herbs can be used in place of dried.
