Ratatouille Soup

A deliciously healthy ratatouille soup that combines fresh vegetables in a comforting broth.

Ingredients

  • 1 cup eggplant, diced
  • 1 cup zucchini, diced
  • 1 cup bell peppers, diced
  • 1 cup tomatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, and sauté until fragrant.
  3. Add eggplant, zucchini, and bell peppers, and cook for about 5 minutes.
  4. Stir in tomatoes, vegetable broth, thyme, basil, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  6. Serve hot and enjoy!
