- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 can (14 ounces) coconut milk
- 2 cups vegetable broth
- 2 cups mixed vegetables (e.g., bell peppers, carrots, and peas)
- 1 tablespoon soy sauce
- 1 teaspoon lime juice
- Salt to taste
