Quick Coconut Curry Soup

A deliciously quick and easy coconut curry soup full of flavor and warmth.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 can (14 ounces) coconut milk
  • 2 cups vegetable broth
  • 2 cups mixed vegetables (e.g., bell peppers, carrots, and peas)
  • 1 tablespoon soy sauce
  • 1 teaspoon lime juice
  • Salt to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and minced garlic, and sauté until softened.
  3. Stir in curry powder and cook for another minute.
  4. Add the coconut milk and vegetable broth, and bring to a simmer.
  5. Add the mixed vegetables and soy sauce, and cook until vegetables are tender.
  6. Finish with lime juice and salt to taste.

Notes

  • Adjust the spice level by adding red pepper flakes if desired.
  • Feel free to add protein such as tofu or chicken.
