  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (e.g., bell peppers, carrots, peas)
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat the coconut oil over medium heat.
  2. Add the onion, garlic, and ginger; sauté until the onion is translucent.
  3. Stir in the curry powder and cook for another minute.
  4. Add the coconut milk and vegetable broth, stirring to combine.
  5. Bring the soup to a simmer, then add the mixed vegetables.
  6. Cook for about 10 minutes until the vegetables are tender.
  7. Stir in the soy sauce and lime juice, and season with salt and pepper to taste.
  8. Remove from heat and garnish with fresh cilantro before serving.

Notes

  • This soup can be made ahead of time and stored in the fridge for up to 3 days.
