- 2 cups cooked shredded chicken
- 1 cup queso cheese
- 1 cup enchilada sauce
- 8 corn tortillas
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 cup diced onions
- 1/4 cup chopped cilantro
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent.
- Add shredded chicken, cumin, chili powder, and half of the queso cheese. Mix well.
- Warm the tortillas in a separate pan until pliable.
