Queso Chicken Enchiladas

  • 2 cups cooked shredded chicken
  • 1 cup queso cheese
  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent.
  3. Add shredded chicken, cumin, chili powder, and half of the queso cheese. Mix well.
  4. Warm the tortillas in a separate pan until pliable.
  5. Fill each tortilla with the chicken mixture and roll them tightly.
  6. Place the rolled tortillas in a baking dish and cover with enchilada sauce and remaining queso cheese.
  7. Bake for 20-25 minutes or until cheese is bubbly.
  8. Garnish with chopped cilantro before serving.

Notes

  • For extra flavor, add black beans or corn to the filling.
  • Serve with a side of guacamole for a fresh touch.
