- 12 large jumbo pasta shells
- 1 cup pumpkin puree
- 1 cup shredded Gouda cheese
- 1/2 cup ricotta cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 cup marinara sauce
- 1/4 cup freshly grated Parmesan cheese
- Preheat oven to 375°F (190°C).
- Cook the jumbo pasta shells according to the package instructions, then drain and set aside.
- In a mixing bowl, combine pumpkin puree, Gouda cheese, ricotta cheese, garlic powder, salt, pepper, and thyme until well mixed.
- Stuff each pasta shell with the pumpkin and cheese mixture.
- Spread half of the marinara sauce on the bottom of a baking dish.
- Arrange the stuffed shells in the dish and top with the remaining marinara sauce.
- Sprinkle Parmesan cheese on top.
