Pumpkin & Gouda Stuffed Shells

  • 12 large jumbo pasta shells
  • 1 cup pumpkin puree
  • 1 cup shredded Gouda cheese
  • 1/2 cup ricotta cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 cup marinara sauce
  • 1/4 cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to the package instructions, then drain and set aside.
  3. In a mixing bowl, combine pumpkin puree, Gouda cheese, ricotta cheese, garlic powder, salt, pepper, and thyme until well mixed.
  4. Stuff each pasta shell with the pumpkin and cheese mixture.
  5. Spread half of the marinara sauce on the bottom of a baking dish.
  6. Arrange the stuffed shells in the dish and top with the remaining marinara sauce.
  7. Sprinkle Parmesan cheese on top.
  8. Bake for 25-30 minutes until heated through and bubbly.

Notes

  • For a touch of sweetness, add a pinch of nutmeg to the filling.
