- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup pumpkin puree
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup rolled oats
- 1/2 teaspoon salt
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter, and press into the bottom of a greased baking dish.
- In another bowl, beat together cream cheese, pumpkin puree, sugar, eggs, vanilla, cinnamon, nutmeg, and ginger.
- Pour the pumpkin mixture over the crust in the baking dish.
- In a separate bowl, mix together flour, brown sugar, oats, and salt to make the streusel topping.
- Sprinkle the streusel topping evenly over the pumpkin mixture.
- Bake for 40-45 minutes, or until set.
- Allow to cool before slicing into bars.
