Pumpkin Cheesecake Bars with Streusel

A delicious fall dessert that combines creamy pumpkin cheesecake with a crunchy streusel topping.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter, and press into the bottom of a greased baking dish.
  3. In another bowl, beat together cream cheese, pumpkin puree, sugar, eggs, vanilla, cinnamon, nutmeg, and ginger.
  4. Pour the pumpkin mixture over the crust in the baking dish.
  5. In a separate bowl, mix together flour, brown sugar, oats, and salt to make the streusel topping.
  6. Sprinkle the streusel topping evenly over the pumpkin mixture.
  7. Bake for 40-45 minutes, or until set.
  8. Allow to cool before slicing into bars.

Notes

  • These bars are best served chilled.
  • They can be topped with whipped cream for extra flavor.
