  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 package (8 oz) cream cheese
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together pumpkin puree, sugars, and oil until well combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Pour the batter into a greased and floured baking pan.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. While the bars are cooling, prepare the frosting by whipping together cream cheese, butter, powdered sugar, and vanilla until smooth.
  9. Spread the frosting over the cooled pumpkin bars.
  10. Cut into squares and serve.

Notes
