- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1 package (8 oz) cream cheese
- 1/2 cup butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together pumpkin puree, sugars, and oil until well combined.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, whisk together flour, baking soda, baking powder, salt, and spices.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Pour the batter into a greased and floured baking pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- While the bars are cooling, prepare the frosting by whipping together cream cheese, butter, powdered sugar, and vanilla until smooth.
- Spread the frosting over the cooled pumpkin bars.
- Cut into squares and serve.
