One Pot Veggie Mac

A delicious and easy one pot veggie mac featuring turkey bacon and chicken ham.

Ingredients

  • 8 ounces elbow macaroni
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 2 cups vegetable broth
  • 1 cup chopped bell pepper
  • 1 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add chopped bell pepper and diced tomatoes, cooking until soft.
  3. Stir in elbow macaroni, chicken ham, vegetable broth, garlic powder, onion powder, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer until macaroni is cooked, about 10 minutes.
  5. Serve warm and enjoy your one pot veggie mac!
