One Pot Veggie Mac and Cheese

  • 8 ounces elbow macaroni
  • 2 cups vegetable broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 cup broccoli florets
  • 1 cup diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the elbow macaroni, vegetable broth, milk, garlic powder, onion powder, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer until the pasta is cooked and most of the liquid is absorbed.
  4. Stir in the broccoli and tomatoes, and cook until the broccoli is tender.
