  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 onion, diced
  • 2 eggs
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 cups mashed potatoes
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, onion, eggs, garlic, salt, and pepper.
  3. Form the mixture into a loaf shape and place it in a baking dish.
  4. Bake for 1 hour or until the internal temperature reaches 160°F (70°C).
  5. While the meatloaf is baking, prepare the mashed potatoes.
  6. In a pot, boil water and add potatoes until tender, then mash with milk, butter, and cheese.
  7. Once the meatloaf is done, top it with the mashed potatoes and additional cheese, then return to the oven for 10 minutes.
  8. Let it rest for a few minutes before serving.
