Low-Carb Bacon Cheeseburger Casserole

A delicious and easy-to-make casserole that combines the flavors of a classic bacon cheeseburger with low-carb ingredients.

  • 1 pound ground turkey
  • 8 slices turkey bacon
  • 1 cup shredded cheese
  • 1 small onion, diced
  • 2 eggs
  • 1/4 cup sugar-free ketchup
  • 1 tablespoon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground turkey and turkey bacon until browned.
  3. Add the diced onion and cook until translucent.
  4. In a bowl, mix eggs, ketchup, mustard, garlic powder, onion powder, salt, and pepper.
  5. Combine the meat mixture with the egg mixture and mix well.
  6. Transfer the mixture to a greased casserole dish and top with shredded cheese.
  7. Bake for 30-35 minutes until set and cheese is bubbly.

Notes

  • Substitute ground beef for turkey for a different flavor.
  • For added flavor, incorporate chopped pickles.
