- 1 pound ground turkey
- 8 slices turkey bacon
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 2 cups cauliflower rice
- 3 large eggs
- 1/2 cup heavy cream
- 2 tablespoons mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the turkey bacon until crispy. Remove and set aside.
- In the same skillet, cook the ground turkey until browned.
- Add onion and bell pepper to the turkey and cook until softened.
- In a large bowl, whisk together eggs, cream, mustard, garlic powder, salt, and pepper.
- Add the cooked turkey mixture and cauliflower rice to the bowl and mix well.
- Pour the mixture into a greased baking dish and top with crumbled bacon and cheese.
- Bake for 30-35 minutes, until the casserole is set and cheese is melted.
Notes
- For extra flavor, add your favorite seasonings.
- You can use regular bacon instead of turkey bacon.
