Low-Carb Bacon Cheeseburger Casserole

A delicious low-carb twist on a classic bacon cheeseburger casserole.

Ingredients

  • 1 pound ground turkey
  • 8 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cups cauliflower rice
  • 3 large eggs
  • 1/2 cup heavy cream
  • 2 tablespoons mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same skillet, cook the ground turkey until browned.
  4. Add onion and bell pepper to the turkey and cook until softened.
  5. In a large bowl, whisk together eggs, cream, mustard, garlic powder, salt, and pepper.
  6. Add the cooked turkey mixture and cauliflower rice to the bowl and mix well.
  7. Pour the mixture into a greased baking dish and top with crumbled bacon and cheese.
  8. Bake for 30-35 minutes, until the casserole is set and cheese is melted.

Notes

  • For extra flavor, add your favorite seasonings.
  • You can use regular bacon instead of turkey bacon.
