Low-Carb Bacon Cheeseburger Casserole

A delicious and easy-to-make low-carb version of a classic bacon cheeseburger casserole.

Ingredients

  • 1 pound ground beef
  • 4 slices bacon
  • 1 cup shredded cheddar cheese
  • 1 cup cauliflower florets
  • 2 eggs
  • 1/4 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the bacon until crispy. Remove and crumble.
  3. In the same skillet, brown the ground beef until fully cooked.
  4. In a large bowl, combine the cooked beef, crumbled bacon, cauliflower, cheese, eggs, cream, and spices. Mix well.
  5. Transfer the mixture to a greased baking dish and spread evenly.
  6. Bake for 25-30 minutes, or until the casserole is set and golden brown on top.
  7. Let it cool slightly before serving.

Notes

  • For extra flavor, add sliced jalapeños or diced tomatoes.
  • This casserole can be prepared ahead of time and stored in the refrigerator.
