  • 2 large potatoes
  • 4 slices turkey bacon
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 avocado, diced
  • 1/2 cup green onions, chopped
  • 1 teaspoon taco seasoning

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes, then bake for 45 minutes or until tender.
  3. Meanwhile, cook the turkey bacon in a skillet until crispy; then chop it up.
  4. Once the potatoes are done, let them cool briefly, then cut them open and fluff the insides with a fork.
  5. Sprinkle taco seasoning on the potato, followed by cheese, bacon, sour cream, and avocado.
  6. Top with green onions and serve warm.
