  • 2 large potatoes
  • 1 cup shredded cheese
  • ½ cup turkey bacon, cooked and crumbled
  • ½ cup sour cream
  • 1 teaspoon taco seasoning
  • ¼ cup green onions, chopped
  • 1 cup black beans, rinsed and drained

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes, then bake for about 45 minutes until tender.
  3. While the potatoes are baking, mix the sour cream with taco seasoning in a bowl.
  4. Once the potatoes are done, remove from the oven and let them cool slightly.
  5. Cut the potatoes open and fluff the insides with a fork.
  6. Layer with black beans, turkey bacon, shredded cheese, and drizzle the seasoned sour cream on top.
