Loaded Potato Taco Bowl

Ingredients

  • 2 large potatoes
  • 1 cup shredded cheese
  • 1 cup cooked taco meat
  • ½ cup sour cream
  • ½ cup green onions, chopped
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes, then rub with olive oil and sprinkle with salt.
  3. Bake the potatoes for about 45 minutes until tender.
  4. In a separate skillet, cook the taco meat with taco seasoning until heated through.
  5. Once the potatoes are cooked, remove them and let them cool slightly.
  6. Cut the potatoes in half lengthwise and scoop out some of the flesh to create a bowl.
  7. Fill each potato with taco meat, cheese, and sour cream.
  8. Top with green onions and additional cheese if desired.
  9. Return to the oven for 10 minutes or until the cheese is melted.

Notes

  • Feel free to add any additional toppings such as jalapeños or guacamole.
  • You can cook the potatoes in the microwave for a faster option.
