Lentil Shepherd’s Pie

A comforting and delicious twist on a classic shepherd’s pie made with lentils, perfect for any home chef.

  • 1 cup lentils
  • 2 cups vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 4 cups mashed potatoes
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pot, combine lentils and vegetable broth and cook until tender.
  3. In a pan, sauté onion and garlic until translucent.
  4. Add mixed vegetables, tomato paste, thyme, and rosemary; cook for a few minutes.
  5. Combine the lentil mixture with the vegetable mixture.
  6. Spread the lentil mixture in a baking dish and top with mashed potatoes.
  7. Sprinkle cheese on top if desired.
  8. Bake for 25-30 minutes until the top is golden brown.

Notes

  • For a vegan version, omit cheese or use a dairy-free alternative.
