- 1 cup lentils
- 2 cups vegetable broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 4 cups mashed potatoes
- 1/2 cup shredded cheese (optional)
- Preheat the oven to 375°F (190°C).
- In a pot, combine lentils and vegetable broth and cook until tender.
- In a pan, sauté onion and garlic until translucent.
- Add mixed vegetables, tomato paste, thyme, and rosemary; cook for a few minutes.
- Combine the lentil mixture with the vegetable mixture.
- Spread the lentil mixture in a baking dish and top with mashed potatoes.
- Sprinkle cheese on top if desired.
- Bake for 25-30 minutes until the top is golden brown.
